Creamy Lemon Pie

Ingredients

  • For the crust:
  • 250g of chocolate-flavored cookies
  • 125g of melted butter
  • For the filling:
  • 2 cans of condensed milk
  • ½ a can of heavy cream
  • Juice of 3 Sicilian lemons
  • For the marshmallow:
  • 250g of sugar
  • 60g of water
  • 4 egg whites

Instructions

Start by crushing the cookies in a food processor. Add the melted butter and process it further. Press the mixture into an 18cm removable pan. Place it in the freezer. Meanwhile, prepare the filling: mix all the ingredients in a bowl until well combined. Pour it over the crust and freeze for 3 hours. While it sets, make the marshmallow: add the sugar and water to a saucepan and heat until it reaches 121 degrees Celsius or forms a thread. Beat the egg whites until stiff peaks form, then slowly add the sugar syrup while continuing to beat. Beat for 5 to 10 minutes or until the mixture is cool to the touch. Use it to top the pie and decorate as desired! Enjoy!
