Ferrero Rocher Cheesecake
Ingredients
- For the crust:
- 10.1 oz chocolate cookies (without filling)
- 5 oz butter
- For the filling:
- 24 oz cream cheese
- 3/4 cup granulated sugar
- 20 oz Nutella
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
- 3/4 cup heavy cream, at room temperature
- 4 large eggs, at room temperature and lightly beaten
- For the ganache:
- 1/2 cup heavy cream
- 10 oz Nutella
Instructions
- Make the crust:
- Adjust the oven rack to the lower third position and preheat the oven to 350°F. Wrap the outside of a 9-inch springform pan tightly with aluminum foil.
- Combine the cookie crumbs and melted butter. Press the crumb mixture onto the bottom and about 2 inches up the sides of the pan. Bake for 10 minutes. Let it cool while you prepare the filling.
- Make the filling:
- Reduce the oven temperature to 320°F.
- In a large bowl, beat the cream cheese and sugar with a mixer until completely smooth and creamy. Add the Nutella, vanilla, and salt. Beat on low speed until well mixed and smooth. Scrape down the sides of the bowl as needed.
- With the mixer on low speed, gradually add the heavy cream. Continue mixing until fully incorporated.
