Ferrero Rocher Cheesecake

Ingredients

  • For the crust:
  • 10.1 oz chocolate cookies (without filling)
  • 5 oz butter
  • For the filling:
  • 24 oz cream cheese
  • 3/4 cup granulated sugar
  • 20 oz Nutella
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 3/4 cup heavy cream, at room temperature
  • 4 large eggs, at room temperature and lightly beaten
  • For the ganache:
  • 1/2 cup heavy cream
  • 10 oz Nutella

Instructions

  1. Make the crust:
  2. Adjust the oven rack to the lower third position and preheat the oven to 350°F. Wrap the outside of a 9-inch springform pan tightly with aluminum foil.
  3. Combine the cookie crumbs and melted butter. Press the crumb mixture onto the bottom and about 2 inches up the sides of the pan. Bake for 10 minutes. Let it cool while you prepare the filling.
  4. Make the filling:
  5. Reduce the oven temperature to 320°F.
  6. In a large bowl, beat the cream cheese and sugar with a mixer until completely smooth and creamy. Add the Nutella, vanilla, and salt. Beat on low speed until well mixed and smooth. Scrape down the sides of the bowl as needed.
  7. With the mixer on low speed, gradually add the heavy cream. Continue mixing until fully incorporated.
