Peanut Butter Salted Caramel Pretzel Brownies

Ingredients

  • 7 ounces dark chocolate (70% cocoa), roughly chopped (about 200g)
  • ½ cup (113g) salted butter
  • 3 large eggs at room temperature
  • ½ cup plus 2 tablespoons (125g) granulated sugar
  • ½ cup (110g) packed dark brown sugar
  • 1 teaspoon (5ml) pure vanilla extract
  • ¼ teaspoon salt
  • ⅔ cup (90g) all-purpose flour
  • ½ cup (120ml) creamy peanut butter, slightly melted and cooled a bit
  • 25 mini pretzel twists
  • ½ cup (120ml) Salted Caramel Sauce

Instructions

Start by preheating your oven to 350°F. Line a 9x9-inch baking pan with parchment paper, leaving a 2-inch overhang on each side.

To prepare the brownie batter, combine the chocolate and butter in a saucepan over very low heat. Stir continuously until they melt and become smooth. Alternatively, you can melt them in the microwave at 50% power in short bursts, stirring frequently.

In a large bowl, whisk together the eggs and both types of sugar. Use a hand mixer or whisk by hand for about 2 minutes until the mixture becomes pale and thick. Mix in the vanilla and salt. Add the melted chocolate mixture and combine it evenly. Then gently fold in the flour until it's well incorporated.

Spread this batter evenly into the lined pan. Drop spoonfuls of peanut butter on top of the batter and use a knife to swirl it in. Arrange the pretzel twists evenly across the surface in neat rows of 5 by 5. Bake for 25-30 minutes until the top looks slightly puffed and shiny. Allow the brownies to cool completely.

Once cooled, drizzle that salted caramel sauce all over the top, then slice and enjoy these irresistible brownies!
