Ingredients

  • 1 ¾ cups all-purpose flour (about 250g)
  • ⅔ cup cocoa powder (I love this one!) - about 56g
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup granulated sugar (around 200g)
  • ½ cup packed light brown sugar (about 110g)
  • ¾ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil (120ml) - I prefer sunflower oil
  • ¾ cup sour cream (180ml)
  • 1 teaspoon pure vanilla extract (5ml)
  • 1 cup hot coffee (240ml)

Instructions

Start by preheating your oven to 350°F. Lightly grease and flour two 8-inch round cake pans, then line the base with parchment paper.

In a big bowl, sift together the flour, cocoa, baking powder, and baking soda. Add both sugars and salt, then whisk it all together, making sure there are no lumps from the brown sugar.

Next, in a medium bowl, mix together the eggs, oil, sour cream, and vanilla until well combined. Pour this mix into the bowl with the dry ingredients. Use an electric hand mixer on medium-low to blend it all. The batter might seem thick and a bit dry. Gradually add the hot coffee in two parts, beating it in until the batter is smooth and even.

Divide this wonderful batter between the prepared pans and bake for 30-33 minutes. You'll know they're ready when the cakes spring back when gently pressed and a skewer inserted into the center comes out clean. Let the pans sit on a wire rack for about 15 minutes before flipping the cakes out to cool completely. Time to indulge in chocolatey goodness!
