Poppy Seed Crumb Cake

Ingredients

  • For the Dough:
  • 4 eggs
  • 1 cup (250g) sugar
  • 1 packet of vanilla sugar
  • 1 3/4 cups (400ml) heavy cream
  • 3 cups (350g) all-purpose flour
  • 1 packet of baking powder
  • 2/3 cup (80g) poppy seeds
  • For the Crumbles:
  • 1/2 cup (100g) butter
  • 2/3 cup (120g) sugar
  • 1 egg
  • 2 1/2 cups (300g) all-purpose flour
  • 1/3 cup (50g) poppy seeds

Instructions

  1. Preheat your oven to 320°F (160°C) and grease a baking pan.
  2. For the dough, beat the eggs, sugar, and vanilla sugar together until fluffy. Then add the heavy cream and mix well.
  3. In a separate bowl, sift together the flour and baking powder. Gradually add this dry mixture to the egg mixture, stirring until well combined.
  4. Gently fold in the poppy seeds until evenly distributed throughout the dough.
  5. Pour the dough into the prepared baking pan and spread it out evenly.
  6. Now, let's make the crumbles! In a bowl, combine the softened butter, sugar, egg, flour, and poppy seeds. Mix until crumbly.
  7. Sprinkle the crumble mixture evenly over the dough in the baking pan.
  8. Pop the pan into the preheated oven and bake for about 40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for a few minutes.
