Ingredients

  • For the Creamy Chocolate Filling:
  • 2 cups heavy cream (36% fat)
  • 16 ounces mascarpone cheese
  • 3/4 cup powdered sugar
  • 2 packets gelatin (10 grams)
  • Additional Ingredients:
  • Approximately 9 ounces cocoa biscuits
  • Approximately 10 ounces chocolate-filled wafer rolls
  • For the Chocolate Glaze:
  • 5.3 ounces milk chocolate, chopped
  • 1/4 cup heavy cream (30/36% fat)
  • 1.4 ounces white chocolate, chopped
  • 2 teaspoons heavy cream

Instructions

  1. Start by blooming the gelatin in cold water (enough to cover it) and set it aside to swell.
  2. Line the bottom of a 9x9-inch square baking dish with cocoa biscuits.
  3. In a large mixing bowl, beat together the mascarpone cheese, heavy cream, and powdered sugar until stiff peaks form.
  4. Heat the bloomed gelatin until dissolved. Once cooled slightly, gradually add a spoonful of the mascarpone mixture to the gelatin, stirring to combine. Then pour the gelatin mixture back into the bowl of mascarpone mixture, continuously mixing until fully incorporated.
  5. Spread half of the mascarpone cream over the layer of cocoa biscuits in the baking dish.
  6. Next, arrange the chocolate-filled wafer rolls on top of the cream layer, followed by the remaining mascarpone cream. Finish with another layer of cocoa biscuits.
  7. To make the chocolate glaze, melt the milk chocolate with the heavy cream in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth. Pour the glaze over the top of the dessert.
  8. For the white chocolate decoration, melt the white chocolate with the heavy cream until smooth. Drizzle the melted white chocolate over the chocolate glaze in a decorative pattern.
  9. Refrigerate the dessert overnight to set.
