- 2 cups heavy cream (36% fat)
- 16 ounces mascarpone cheese
- 3/4 cup powdered sugar
- 2 packets gelatin (10 grams)
- Additional Ingredients:
- Approximately 9 ounces cocoa biscuits
- Approximately 10 ounces chocolate-filled wafer rolls
- For the Chocolate Glaze:
- 5.3 ounces milk chocolate, chopped
- 1/4 cup heavy cream (30/36% fat)
- 1.4 ounces white chocolate, chopped
- 2 teaspoons heavy cream
Instructions
- Start by blooming the gelatin in cold water (enough to cover it) and set it aside to swell.
- Line the bottom of a 9x9-inch square baking dish with cocoa biscuits.
- In a large mixing bowl, beat together the mascarpone cheese, heavy cream, and powdered sugar until stiff peaks form.
- Heat the bloomed gelatin until dissolved. Once cooled slightly, gradually add a spoonful of the mascarpone mixture to the gelatin, stirring to combine. Then pour the gelatin mixture back into the bowl of mascarpone mixture, continuously mixing until fully incorporated.
- Spread half of the mascarpone cream over the layer of cocoa biscuits in the baking dish.
- Next, arrange the chocolate-filled wafer rolls on top of the cream layer, followed by the remaining mascarpone cream. Finish with another layer of cocoa biscuits.
- To make the chocolate glaze, melt the milk chocolate with the heavy cream in a heatproof bowl set over a pot of simmering water (double boiler method), stirring until smooth. Pour the glaze over the top of the dessert.
