Ingredients

  • Chocolate Ganache:
  • 1/2 cup chocolate chips
  • 1/4 cup heavy cream
  • Chocolate Cookies:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup Dutch process cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 sticks unsalted butter, softened
  • 2/3 cup light brown sugar
  • 1/3 cup granulated sugar
  • 2 egg yolks, room temp
  • 1 tsp vanilla extract
  • Frosting:
  • 2 sticks unsalted butter, softened
  • 3 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • 3 tbsp heavy cream

Instructions

  1. Let's kick things off by preheating your oven to 350 degrees F.
  2. First up, let's make that delicious chocolate ganache! Warm up the heavy cream and mix it with the chocolate chips until smooth. Pop it in the fridge while we whip up the cookies.
  3. In a bowl, combine the flour, cocoa powder, baking powder, and salt. Set it aside. Now, cream together the butter and sugars until fluffy. Add in the egg yolks and vanilla extract, then mix in the dry ingredients until a cookie dough forms.
  4. Take that chilled ganache out of the fridge and scoop it into small balls (about 9 balls). Save the rest of the ganache for later drizzling. Place the ganache balls in the freezer for 20 minutes.
  5. Time to shape the cookie dough! Use an ice cream scooper to make 9 large cookie dough balls. Press down the center of each ball and place a ganache ball inside, then roll the dough back into a ball around it. Bake for 10 minutes.
  6. While the cookies cool, let's whip up the frosting.
  7. Beat together the softened butter, powdered sugar, cocoa powder, vanilla extract, and heavy cream until smooth.
  8. Once the cookies are cooled, pipe frosting on top of each cookie and drizzle with the remaining ganache. Enjoy every chocolaty bite!
