Ultimate Upside Down Crumb Cake

Ingredients

  • Crumb:
  • 8 tbsp unsalted butter, softened
  • 3/4 cup all-purpose flour
  • 1 1/2 cup light brown sugar
  • 1 tbsp ground cinnamon
  • Pecan topping:
  • 1 1/4 cup chopped pecans
  • 1/2 cup dark brown sugar
  • 1/2 tbsp cinnamon
  • 5 tbsp unsalted butter, melted
  • 1 tbsp maple syrup
  • Cake:
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 8 tbsp unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temp
  • 1 1/2 tsp vanilla extract
  • 1 cup buttermilk or whole milk
  • Icing:
  • 1/2 cup powdered sugar
  • 2 tbsp maple syrup
  • 1 tbsp milk

Instructions

  1. Preheat your oven to 350°F. Grease the sides of a 9x9 or 9x13 baking dish. Line the bottom with parchment paper and grease it well.
  2. Let’s start with the crumb! Mix all the crumb ingredients together, forking in the softened butter until you get a nice crumbly texture. Set it aside. Now, mix up the pecan mixture in another bowl and set that aside too.
  3. Grab a medium bowl and mash up those bananas. Keep them to the side for now.
  4. In a separate bowl, mix together the flour, baking powder, cinnamon, and salt. Set it aside.
  5. Time to beat that butter! Use a stand mixer or a handheld one and beat the butter until it’s nice and fluffy. Then, add in the sugar and keep on beating until everything’s combined. Drop in the eggs and vanilla extract, followed by those mashed bananas.
  6. Slowly add the dry ingredients and milk, alternating a bit at a time until everything is mixed together perfectly.
  7. Now, let’s layer it up! Start by spreading your pecans on the bottom of the baking dish. Sprinkle some of that crumb over the pecans. Pour in half of your batter, then sprinkle on more crumb. Pour in the remaining batter and give it a light sprinkle with the remaining crumb.
  8. Pop that beauty in the oven and bake it for 45-50 minutes until it’s beautifully golden brown! Once it’s done, let it cool for about 10-15 minutes. Then, flip the baking dish onto a cooling rack. Those pecans will be right side up! If any fell off during the flip, just pop them back on.
  9. Finally, whip up the icing by combining all the icing ingredients in a small bowl. Drizzle it over the cake, cut yourself a slice, and dive into breakfast bliss! Enjoy every bite!
