Mini Funfetti Cheesecake Bites
Ingredients
- For the Crust:
- 2 cups crushed Nilla Vanilla Wafers
- 8 tablespoons (1 stick) melted unsalted butter
- For the Cheesecake Filling:
- 2 blocks (8 ounces each) cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup granulated sugar
- 1 cup yellow cake mix, heat-treated in the microwave for 90 seconds, then cooled
- 1 1/2 cups heavy whipping cream
- 1 cup rainbow sprinkles
- For the Whipped Cream:
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Additional rainbow sprinkles for topping
Instructions
- Preheat your oven to 350°F and line a 12-cup muffin pan.
- Combine the crushed Nilla Vanilla Wafers and melted butter. Press about 2 tablespoons of the mixture into each muffin cup. Bake for 10 minutes, then remove and cool. You can chill them in the fridge while preparing the filling.
- In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, granulated sugar, and heat-treated cake mix, beating until smooth. Transfer this mixture to another bowl.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold it into the cream cheese mixture, along with the rainbow sprinkles.
- Spoon about 2-3 tablespoons of the filling into each cup and smooth the tops with the back of a spoon.
- Refrigerate the cheesecakes overnight to set.
- To make the whipped cream, whisk together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Pipe the whipped cream onto the chilled cheesecakes, sprinkle with additional rainbow sprinkles, and enjoy your delightful Mini Funfetti Cheesecake Bites!
