Mini Funfetti Cheesecake Bites

Ingredients

  • For the Crust:
  • 2 cups crushed Nilla Vanilla Wafers
  • 8 tablespoons (1 stick) melted unsalted butter
  • For the Cheesecake Filling:
  • 2 blocks (8 ounces each) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 cup yellow cake mix, heat-treated in the microwave for 90 seconds, then cooled
  • 1 1/2 cups heavy whipping cream
  • 1 cup rainbow sprinkles
  • For the Whipped Cream:
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Additional rainbow sprinkles for topping

Instructions

  1. Preheat your oven to 350°F and line a 12-cup muffin pan.
  2. Combine the crushed Nilla Vanilla Wafers and melted butter. Press about 2 tablespoons of the mixture into each muffin cup. Bake for 10 minutes, then remove and cool. You can chill them in the fridge while preparing the filling.
  3. In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar, granulated sugar, and heat-treated cake mix, beating until smooth. Transfer this mixture to another bowl.
  4. In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold it into the cream cheese mixture, along with the rainbow sprinkles.
  5. Spoon about 2-3 tablespoons of the filling into each cup and smooth the tops with the back of a spoon.
  6. Refrigerate the cheesecakes overnight to set.
  7. To make the whipped cream, whisk together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Pipe the whipped cream onto the chilled cheesecakes, sprinkle with additional rainbow sprinkles, and enjoy your delightful Mini Funfetti Cheesecake Bites!
