Cheese Crumb Cake
Ingredients
- Ingredients For the Base + Crumbs:
- 1 cup + 2 tablespoons unsalted butter, softened (250g)
- 1 cup sugar (120g)
- 1 large egg
- 1 teaspoon baking powder
- 3 1/2 cups all-purpose flour (450g) (+2 tablespoons flour for the crumbs)
- For the Filling:
- 2 1/4 cups cream cheese (500g)
- 2 cups quark (40%) (500g)
- 1 3/4 cups heavy cream (400ml)
- 1 cup sugar (200g)
- 2 packets vanilla sugar
- 4 large eggs
- 2 packets vanilla pudding powder
Instructions
- In a bowl, combine all ingredients for the base and knead into a soft dough. Set aside less than half for the crumbs, add 2 tablespoons of flour, and crumble.
- Spread the remaining dough on a tray with parchment paper, pressing it down firmly. (Approximately 25x35cm)
- For the filling, mix all ingredients together and pour into the tray. Sprinkle the crumbs on top.
- Bake the cake in the preheated oven at 160°C for about 45 minutes.
- Let the cake cool for at least 4 hours, preferably overnight, in the refrigerator.

Bake in a preheated oven at 160°C (320°F) in conventional mode for approximately 45 minutes.
