Cheese Crumb Cake


  • Ingredients For the Base + Crumbs:
  • 1 cup + 2 tablespoons unsalted butter, softened (250g)
  • 1 cup sugar (120g)
  • 1 large egg
  • 1 teaspoon baking powder
  • 3 1/2 cups all-purpose flour (450g) (+2 tablespoons flour for the crumbs)
  • For the Filling:
  • 2 1/4 cups cream cheese (500g)
  • 2 cups quark (40%) (500g)
  • 1 3/4 cups heavy cream (400ml)
  • 1 cup sugar (200g)
  • 2 packets vanilla sugar
  • 4 large eggs
  • 2 packets vanilla pudding powder


    Baking Time:
    Bake in a preheated oven at 160°C (320°F) in conventional mode for approximately 45 minutes.

  1. In a bowl, combine all ingredients for the base and knead into a soft dough. Set aside less than half for the crumbs, add 2 tablespoons of flour, and crumble.
  2. Spread the remaining dough on a tray with parchment paper, pressing it down firmly. (Approximately 25x35cm)
  3. For the filling, mix all ingredients together and pour into the tray. Sprinkle the crumbs on top.
  4. Bake the cake in the preheated oven at 160°C for about 45 minutes.
  5. Let the cake cool for at least 4 hours, preferably overnight, in the refrigerator.
