Apple Cake
Ingredients
- For the Cake Batter:
- 6 eggs
- 1/2 cup canola oil
- 1/4 cup milk
- 1/2 cup sugar (adjust to taste)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- For the Apples:
- 5-7 large apples
- 2 1/2 tablespoons sugar
- 1 teaspoon cinnamon
- 2 tablespoons lemon juice
- 2-3 tablespoons water
- 2 heaping tablespoons cornstarch (optional)
Instructions
Preparing the Apples:
- Grate the apples using a large grater.
- Add cinnamon, sugar, water, and lemon juice to the grated apples.
- Cook the mixture until the apples are soft.
- Optionally, thicken the mixture with cornstarch.
Making the Cake Batter:
- In a bowl, beat the eggs with sugar until fluffy.
- Reduce the speed and slowly pour in the canola oil.
- Add milk and mix until combined.
- Sift together the flour and baking powder.
- Gradually add the flour mixture to the batter, mixing gently until combined.
Assembly and Baking:
- Preheat the oven to 350°F (180°C).
- Pour half of the batter into the bottom of a baking pan.
- Bake for about 15-17 minutes until partially baked.
- Spread the cooked apple mixture over the partially baked crust.
- Pour the remaining half of the raw batter over the apple mixture.
- Bake for about 35 minutes until a toothpick inserted into the cake comes out clean.
- Once done, drizzle with icing and sprinkle with almonds.
