Marble Cake Delight


  • 4 cups all-purpose flour (or wheat flour)
  • ✅1 cup (2 sticks) butter
  • ✅5 egg yolks
  • ✅1/3 cup sugar (or more for sweeter taste)
  • ✅2 teaspoons baking powder
  • ✅2 tablespoons cocoa powder
  • Ingredients for meringue:
  • ✅5 egg whites
  • ✅3/4 cup sugar
  • ✅2 tablespoons cornstarch
  • Additionally:
  • 12 ounces (about 2 cups) currant jam (I used sugar-free)


    We beat the meringue until stiff, gradually adding sugar, then adding cornstarch at the end and mixing only until combined.

    ➡️ Combine and knead the cake ingredients (I did it in a stand mixer with a dough hook). Form the dough into a ball. Divide the dough into three equal parts. (Set aside one light and dark part in the freezer) Add cocoa to one part and mix until smooth.

    Line the bottom of the pan with parchment paper. Press one light part onto the bottom of the pan. Parbake it for 10 minutes at 325°F (170°C).

    Spread the jam over the parbaked crust, then grate the dark part of the dough on top.

    Next, spread the beaten egg white meringue over it and grate the light part of the dough on top.

    Bake for about 45 minutes (at 350°F or 180°C)."
