Quick Gingerbread
Ingredients
- 🎄2 cups all-purpose flour
- ✅1/2 cup (120g) butter
- 🎄1/3 cup sugar
- ✅1 cup milk
- 🎄2 eggs
- ✅2 heaping tablespoons jam (any flavor)
- 🎄2 teaspoons gingerbread spice
- ✅2 teaspoons cocoa powder
- 🎄2 tablespoons honey
- ✅2 teaspoons baking soda
- For filling:
- 🎄4 tablespoons jam
- Glossy icing:
- ✅2 tablespoons cocoa powder
- 🎄1/4 cup (60g) butter
- ✅1/4 cup (30g) powdered sugar
- 🎄1 teaspoon gelatin
- ✅3 tablespoons boiling water
Instructions
📝 In a saucepan, melt the butter, add sugar, honey, jam, gingerbread spice, and cocoa powder.
👉 Mix everything well. In a separate bowl, lightly beat the eggs with milk and baking soda.
👉 Add the cooled butter mixture to the egg mixture. Mix on low speed. Gradually add flour and mix until smooth.
👉 Pour the batter into a loaf pan (lined with parchment paper) and bake for about 50 minutes (until a toothpick comes out clean) at 350°F (180°C).
👉 Remove from the oven and let it cool. Cut the cooled gingerbread in half and spread jam on one half.
👉 Let’s make the icing ♥️: In a saucepan, melt the butter, add sugar, mix until completely dissolved, add cocoa powder. Dissolve gelatin in boiling water and add it to the rest of the ingredients. Mix well.
👉 Finally, pour the icing over the gingerbread."
