Quick Gingerbread

Ingredients

  • 🎄2 cups all-purpose flour
  • ✅1/2 cup (120g) butter
  • 🎄1/3 cup sugar
  • ✅1 cup milk
  • 🎄2 eggs
  • ✅2 heaping tablespoons jam (any flavor)
  • 🎄2 teaspoons gingerbread spice
  • ✅2 teaspoons cocoa powder
  • 🎄2 tablespoons honey
  • ✅2 teaspoons baking soda
  • For filling:
  • 🎄4 tablespoons jam
  • Glossy icing:
  • ✅2 tablespoons cocoa powder
  • 🎄1/4 cup (60g) butter
  • ✅1/4 cup (30g) powdered sugar
  • 🎄1 teaspoon gelatin
  • ✅3 tablespoons boiling water

Instructions

    📝 In a saucepan, melt the butter, add sugar, honey, jam, gingerbread spice, and cocoa powder.
    👉 Mix everything well. In a separate bowl, lightly beat the eggs with milk and baking soda.
    👉 Add the cooled butter mixture to the egg mixture. Mix on low speed. Gradually add flour and mix until smooth.
    👉 Pour the batter into a loaf pan (lined with parchment paper) and bake for about 50 minutes (until a toothpick comes out clean) at 350°F (180°C).
    👉 Remove from the oven and let it cool. Cut the cooled gingerbread in half and spread jam on one half.
    👉 Let’s make the icing ♥️: In a saucepan, melt the butter, add sugar, mix until completely dissolved, add cocoa powder. Dissolve gelatin in boiling water and add it to the rest of the ingredients. Mix well.
    👉 Finally, pour the icing over the gingerbread."
