Blueberry Cake with Cream

Ingredients

  • For the batter:
  • 2 eggs
  • 4.2 oz (120g) sugar
  • 1 packet vanilla sugar
  • 200ml cream
  • 1.4 cups (200g) flour
  • 1 teaspoon baking powder
  • Blueberries
  • Additionally:
  • 4.2 oz (120g) powdered sugar
  • 2 tablespoons milk
  • Blueberries

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Grease and flour a 9-inch (26cm) springform pan.
  3. Making the Batter:
  4. In a mixing bowl, beat together the eggs, sugar, and vanilla sugar until light and fluffy.
  5. Gradually add the cream while continuing to beat the mixture.
  6. Sift in the flour and baking powder, then gently fold them into the batter until just combined.
  7. Carefully fold in the blueberries.
  8. Baking:
  9. Pour the batter into the prepared springform pan and spread it evenly.
  10. Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Once baked, remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  12. Making the Glaze:
  13. In a small bowl, mix together the powdered sugar and milk until smooth.
  14. Drizzle the glaze over the cooled cake.
  15. Finishing Touches:
  16. Decorate the top of the cake with additional fresh blueberries, if desired.
