Blueberry Cake with Cream
Ingredients
- For the batter:
- 2 eggs
- 4.2 oz (120g) sugar
- 1 packet vanilla sugar
- 200ml cream
- 1.4 cups (200g) flour
- 1 teaspoon baking powder
- Blueberries
- Additionally:
- 4.2 oz (120g) powdered sugar
- 2 tablespoons milk
- Blueberries
Instructions
- Preheat your oven to 350°F (180°C).
- Grease and flour a 9-inch (26cm) springform pan.
- Making the Batter:
- In a mixing bowl, beat together the eggs, sugar, and vanilla sugar until light and fluffy.
- Gradually add the cream while continuing to beat the mixture.
- Sift in the flour and baking powder, then gently fold them into the batter until just combined.
- Carefully fold in the blueberries.
- Baking:
- Pour the batter into the prepared springform pan and spread it evenly.
- Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- Making the Glaze:
- In a small bowl, mix together the powdered sugar and milk until smooth.
- Drizzle the glaze over the cooled cake.
- Finishing Touches:
- Decorate the top of the cake with additional fresh blueberries, if desired.
