Banana Pudding Cookie Cups
Ingredients
- For the Cookie Cups:
- 2 cups crushed Vanilla Wafers
- 2 cups crushed Golden Oreos
- 12 tablespoons melted unsalted butter
- For the Filling:
- 2 bananas, sliced (keep them in a bowl)
- 2 boxes instant pudding (1 Vanilla + 1 Banana cream, each 3.4 ounces)
- 2 cups milk
- 14 oz. can sweetened condensed milk
- 2 cups heavy cream
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350 degrees F and grease a 12-cup muffin pan.
- Mix together the crushed golden Oreos and vanilla wafers. Set aside 1/4 cup for later.
- Stir the melted butter into the remaining crushed cookies until combined. Use a medium ice cream scoop to fill each muffin cup with the cookie mixture, shaping them into cups. Bake for 10-12 minutes, then let them cool.
- In a bowl, stir together the milk and sweetened condensed milk.
- Add the instant pudding mixes and continue stirring until thickened. Chill this mixture in the fridge.
- Whip the heavy cream with a stand or handheld mixer until soft peaks form. Reserve a quarter of the whipped cream in the bowl and fold the rest into the chilled pudding.
- Mix the powdered sugar into the reserved whipped cream and put it in a piping bag.
- Once the cookie cups are fully cooled, place a sliced banana at the bottom of each cup. Pipe in the pudding mixture and then pipe on top the whipped cream. Sprinkle the reserved crushed wafers on top and finish off with a vanilla wafer and banana slice. Now, you're ready to indulge in these delightful treats! Enjoy!
