Cookie Dough Snack Cake

Ingredients

  • For the Cake:
  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups granulated sugar
  • 12 tablespoons unsalted butter, at room temperature
  • 3 eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1/2 cup mini chocolate chips
  • Sliced cookie dough (you can use pre-bought or leftover cookie dough)
  • For the Cookie Dough Frosting:
  • 16 tablespoons unsalted butter, softened
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 3 tablespoons milk
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour, microwaved for 90 seconds
  • 1/2 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • Optional: edible cookie dough and mini chocolate chips for topping

Instructions

  1. Preheat your oven to 350°F. Line a 9-inch square cake pan with parchment paper and grease the sides.
  2. In a large bowl, mix together the dry cake ingredients, leaving out the sugar. Set this aside.
  3. In another bowl, beat the butter with an electric mixer. Add in the sugar and beat for about 5 minutes. Then, mix in the eggs and vanilla extract until everything's well combined. Gradually add in the milk and flour, alternating a bit at a time until it's smooth. Fold in those yummy mini chocolate chips.
  4. Pour half of the cake batter into your prepared pan. Layer some slices of cookie dough on top, then pour the remaining batter over the cookie dough layer and smooth it out. Pop it in the oven and bake for 45-50 minutes. Once it's done, let it cool for about 5 minutes before transferring it onto a cooling rack.
  5. While your cake is cooling, whip up your frosting by beating the softened butter. Add in the brown sugar, vanilla extract, milk, and salt. Keep beating for about 8 minutes. Microwave the flour in a small bowl for 90 seconds to heat treat it, then add it to the mixture along with the powdered sugar. Beat it all together until it's nice and smooth.
  6. Once your cake is cooled, trim the sides if needed and then frost it with that delicious cookie dough frosting. If you want to get extra fancy, you can add some edible cookie dough and mini chocolate chips on top for decoration. Enjoy every bite of this scrumptious treat!
