Ingredients

  • Milk, 180 ml (¾ cup)
  • Dry yeast, 10g + 1 tsp sugar
  • All-purpose flour, 580g (4 ½ cups)
  • Salt, 1 pinch
  • Sugar, 120g (½ cup)
  • Eggs, 2
  • Butter, 80g (½ cup)
  • Lemon zest, 1
  • Orange blossom water, 1 tbsp
  • For the filling:
  • Cream cheese, 150g
  • Dulce de leche, 250g

Instructions

  1. In a bowl, mix milk with yeast and a teaspoon of sugar. Set aside.
  2. In another bowl, combine flour, a pinch of salt, and, creating a well in the middle, add the reserved milk mixture, eggs, sugar, melted butter, lemon zest, and orange blossom water. Mix well to form a homogeneous dough.
  3. Knead on a work surface, shape into a ball, and let it rise covered in a container until it doubles in size.
  4. Deflate the dough with your hands and knead again. To achieve the ideal shape, form a ball and poke your finger in the center, enlarging it to create the Rosca.
  5. Place the Rosca on a baking tray with parchment paper, let it rise covered until it doubles in size. Brush with beaten egg and decorate with chopped almonds, orange slices, and pecan nuts.
  6. Bake at 180°C for 35 minutes. Keep an eye on it; baking time may vary.
  7. Meanwhile, whip the dulce de leche with cream cheese until creamy.
  8. Cut the Rosca in half and fill it.
