Ingredients

  • 1.7 cups (400ml) heavy cream
  • 2.11 cups (500g) low-fat quark
  • 7.05 ounces (200g) cream cheese
  • 1 cup (100g) powdered sugar
  • 1 packet vanilla sugar
  • 1 packet whipped cream stabilizer
  • 2 tablespoons lemon juice
  • Zest of one organic lemon
  • For the Mandarin Sauce:
  • 2 cans of mandarins (10.58 ounces/300g each)
  • 1 teaspoon agar-agar (plant-based gelatin)
  • 1.27 cups (300ml) multivitamin juice or orange juice
  • 1 tablespoon sugar
  • For the Base:
  • 1.5 cups (150g) ground lemon waffle cookies or ground ladyfinger biscuits

Instructions

  1. In a mixing bowl, whip the heavy cream until stiff peaks form.
  2. In a separate bowl, combine quark, cream cheese, powdered sugar, vanilla sugar, whipped cream stabilizer, lemon juice, and lemon zest. Mix until smooth.
  3. Gently fold the whipped cream into the quark mixture until well combined.
  4. For the mandarin sauce, drain the mandarins and set aside a few for decoration. In a saucepan, combine agar-agar, multivitamin juice, and sugar. Heat until it thickens, then let it cool slightly.
  5. Add the mandarins to the sauce, reserving some for garnish.
  6. In serving glasses or a dish, create a base using the ground lemon waffle cookies or ladyfinger biscuits.
  7. Spoon the quark and cream mixture over the base.
  8. Pour the mandarin sauce over the creamy layer.
  9. Garnish with reserved mandarins.
  10. Chill in the refrigerator for a few hours or until set.
