Ingredients

  • Chocolate Layer (3 layers):
  • 1 1/4 cups all-purpose flour (about 150 grams)
  • 2 tablespoons alkalized cocoa powder (about 15 grams)
  • 3 tablespoons sugar (about 35 grams)
  • 1 teaspoon baking powder (about 3 grams)
  • 7 tablespoons unsalted butter (about 100 grams)
  • Cottage Cheese Cheesecake Layer:
  • 3/4 cup cottage cheese (about 180 grams)
  • 2 eggs
  • 1/4 cup sugar (about 50 grams)
  • Vanilla extract
  • 1/2 cup sour cream (about 100 grams)
  • 5 ounces cream cheese (about 140 grams)
  • 1/4 cup cornstarch (about 25 grams)

Instructions

  1. Start by chilling the butter in the freezer for about 30 minutes.
  2. For the cottage cheese layer, blend together cottage cheese, eggs, sugar, vanilla extract, and sour cream until smooth. Add cream cheese and blend again. Mix in cornstarch until well combined. Divide into two equal parts, about 300 grams each, and chill in the fridge while you prepare the chocolate crumbs.
  3. For the chocolate layer, sift together flour, cocoa powder, and baking powder. Stir in sugar. Grate the chilled butter into the dry mixture and rub it into coarse crumbs with your fingers. Divide into three equal parts, about 100 grams each.
  4. Line the bottom of the baking pan with parchment paper and foil if your pan doesn't have a bottom. Spread one part of the chocolate crumbs evenly as the first layer. Gently press it down. Take out one part of the cottage cheese mixture from the fridge and pour it over the chocolate crumbs. Repeat: crumbs, cheesecake, crumbs. You should end up with 5 layers: chocolate, cheesecake, chocolate, cheesecake, chocolate.
  5. Bake in a preheated oven at 180°C (about 350°F) for approximately 40 minutes.
  6. Let it cool, then slice into portions and enjoy! 🥰
