Passion Fruit Muffins
Ingredients
- Muffins:
- 2 1/2 cups (300g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (200g) granulated sugar
- 1 cup (240g) plain yogurt (unsweetened)
- 2 medium eggs
- 1 teaspoon vanilla extract
- 2 tablespoons (30g) sunflower oil
- 1/2 cup (115g) melted butter
- 1/2 cup (120g) Passion Fruit Pulp
- Crunchy Topping:
- 1/2 cup (60g) flour
- 1/4 cup (50g) sugar
- 2 tablespoons melted butter
- Glaze:
- 1 cup (120g) powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons (30g) Passion Fruit Pulp
Instructions
- Preparing the Muffins:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk together the sugar, yogurt, eggs, vanilla extract, sunflower oil, melted butter, and passion fruit pulp until smooth and creamy.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
- Making the Crunchy Topping:
- In a small bowl, combine the flour, sugar, and melted butter until crumbly.
- Sprinkle the topping evenly over the muffin batter in each cup.
- Baking:
- Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
- Preparing the Glaze:
- In a small bowl, whisk together the powdered sugar, vanilla extract, and passion fruit pulp until smooth.
- Drizzle the glaze over the cooled muffins.
