Passion Fruit Muffins

Ingredients

  • Muffins:
  • 2 1/2 cups (300g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1 cup (240g) plain yogurt (unsweetened)
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30g) sunflower oil
  • 1/2 cup (115g) melted butter
  • 1/2 cup (120g) Passion Fruit Pulp
  • Crunchy Topping:
  • 1/2 cup (60g) flour
  • 1/4 cup (50g) sugar
  • 2 tablespoons melted butter
  • Glaze:
  • 1 cup (120g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30g) Passion Fruit Pulp

Instructions

  1. Preparing the Muffins:
  2. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  4. In another bowl, whisk together the sugar, yogurt, eggs, vanilla extract, sunflower oil, melted butter, and passion fruit pulp until smooth and creamy.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  7. Making the Crunchy Topping:
  8. In a small bowl, combine the flour, sugar, and melted butter until crumbly.
  9. Sprinkle the topping evenly over the muffin batter in each cup.
  10. Baking:
  11. Bake the muffins in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  12. Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  13. Preparing the Glaze:
  14. In a small bowl, whisk together the powdered sugar, vanilla extract, and passion fruit pulp until smooth.
  15. Drizzle the glaze over the cooled muffins.
