Creamy and Delicious Cheesecake
Ingredients
- For the Crust:
- 2 cups (200g) butter cookies
- 1/2 cup (50g) ground hazelnuts
- 1/2 cup (100g) butter, melted
- For the Filling:
- 3.5 cups (700g) quark (40% fat)
- 2.2 cups (500g) cream cheese
- 1 cup (200ml) heavy cream
- 1 cup (200g) sugar
- 1 packet vanilla sugar
- 1 packet vanilla pudding powder
- 2 tablespoons semolina (cream of wheat)
- 5 eggs
- Zest and juice of one organic lemon
Instructions
- Preheat your oven to 356°F (180°C) in both upper and lower heat.
- Crush the butter cookies into fine crumbs and combine them with ground hazelnuts. Mix in melted butter until the crust mixture is well-combined.
- Press the crust mixture into the base of a 28cm diameter baking pan.
- In a large mixing bowl, combine quark, cream cheese, heavy cream, sugar, vanilla sugar, vanilla pudding powder, semolina, eggs, lemon zest, and lemon juice. Mix until you get a smooth and creamy filling.
- Pour the cheesecake filling onto the crust, spreading it evenly.
- Bake in the preheated oven for approximately 45 minutes or until the top is golden brown.
- Allow the cheesecake to cool before refrigerating for a few hours or overnight.
