Creamy and Delicious Cheesecake

Ingredients

  • For the Crust:
  • 2 cups (200g) butter cookies
  • 1/2 cup (50g) ground hazelnuts
  • 1/2 cup (100g) butter, melted
  • For the Filling:
  • 3.5 cups (700g) quark (40% fat)
  • 2.2 cups (500g) cream cheese
  • 1 cup (200ml) heavy cream
  • 1 cup (200g) sugar
  • 1 packet vanilla sugar
  • 1 packet vanilla pudding powder
  • 2 tablespoons semolina (cream of wheat)
  • 5 eggs
  • Zest and juice of one organic lemon

Instructions

  1. Preheat your oven to 356°F (180°C) in both upper and lower heat.
  2. Crush the butter cookies into fine crumbs and combine them with ground hazelnuts. Mix in melted butter until the crust mixture is well-combined.
  3. Press the crust mixture into the base of a 28cm diameter baking pan.
  4. In a large mixing bowl, combine quark, cream cheese, heavy cream, sugar, vanilla sugar, vanilla pudding powder, semolina, eggs, lemon zest, and lemon juice. Mix until you get a smooth and creamy filling.
  5. Pour the cheesecake filling onto the crust, spreading it evenly.
  6. Bake in the preheated oven for approximately 45 minutes or until the top is golden brown.
  7. Allow the cheesecake to cool before refrigerating for a few hours or overnight.
