Pineapple Delight

Ingredients

  • For the Belgian cream:
  • 3 egg yolks
  • 1 can condensed milk
  • 1 can heavy cream
  • 2 cups milk
  • ¼ cup cornstarch
  • 3.5 oz white chocolate
  • ½ cup powdered milk
  • For the pineapple topping:
  • 1 pineapple, diced
  • 1 cup sugar
  • A pinch of cinnamon
  • For the marshmallow:
  • 3 egg whites
  • 12 tbsp sugar
  • Marshmallow preparation:

Instructions

  1. Belgian Cream:
  2. In a saucepan, whisk together the egg yolks, condensed milk, heavy cream, milk, and cornstarch until well combined.
  3. Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon.
  4. Remove from heat and stir in the white chocolate and powdered milk until melted and smooth. Set aside to cool.
  5. Pineapple Topping:
  6. In a separate saucepan, combine the diced pineapple, sugar, and cinnamon.
  7. Cook over medium heat, stirring occasionally, until the pineapple is soft and the sugar has dissolved, about 15-20 minutes.
  8. Remove from heat and let it cool.
  9. Marshmallow:
  10. In a clean, dry bowl, beat the egg whites with an electric mixer until frothy.
  11. Gradually add the sugar, continuing to beat until stiff peaks form and the sugar is completely dissolved.
  12. This usually takes about 10 minutes of beating.
  13. Assembly:
  14. Once all components are prepared and cooled, begin assembling the dessert.
  15. Spread a layer of the Belgian cream in the bottom of serving dishes or a large serving bowl.
  16. Top the cream with a layer of the cooked pineapple mixture.
  17. Spoon dollops of the marshmallow mixture on top of the pineapple layer.
  18. Optionally, you can use a kitchen torch to lightly toast the marshmallow topping for added flavor and texture.
  19. Serve chilled and enjoy your delightful pineapple dessert!
