Strawberry Crisp Bars

Ingredients

  • Base:
  • 3/4 cup all-purpose flour (87g)
  • 1/4 cup melted butter (58g)
  • 1 tablespoon white sugar (20g)
  • A pinch of salt
  • Strawberry Filling:
  • 1/2 cup frozen strawberries (50g)
  • 1/8 cup white sugar (40g)
  • 1/2 tablespoon lemon juice (8g)
  • 1 teaspoon cornstarch (4g)
  • Crunchy Topping:
  • 1/4 cup butter (55g)
  • 1/2 cup rolled oats (50g)
  • 1/4 cup almonds (20g)
  • 1/2 cup flour (70g)
  • 1/4 cup sugar (60g)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a bowl, mix together the flour, melted butter, sugar, and a pinch of salt until crumbly.
  3. Press the mixture firmly into the bottom of the prepared baking pan to form the base.
  4. In a saucepan, combine the frozen strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat until the strawberries are soft and the mixture thickens.
  5. Spread the strawberry filling evenly over the base in the baking pan.
  6. In another bowl, mix together the rolled oats, almonds, flour, sugar, and melted butter until crumbly.
  7. Sprinkle the oat mixture over the strawberry filling.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the edges are bubbly.
  9. Allow the bars to cool completely before cutting into squares.
  10. Serve and enjoy these deliciously crunchy and fruity bars!
