Spanish Nest Doughnuts
Ingredients
- 1 cup (250ml) water
- 1/4 cup (60g) butter
- 3 eggs
- a pinch of salt
- 1 1/4 cups (150g) all-purpose flour
- 1 liter of frying oil
Instructions
- In a saucepan, bring a cup of water with butter and a pinch of salt to a boil. Reduce the heat and add the sifted flour, stirring constantly.
- Beat the mixture until smooth and it begins to pull away from the sides of the saucepan. Let it cool down.
- Mix in the eggs until well combined.
- Transfer the dough to a piping bag.
- Cut squares of parchment paper about 4 inches (10cm) in size. Pipe a circle about 2.5 inches (7cm) in diameter onto each square.
- Heat the frying oil. Place the doughnuts into the hot oil with the parchment paper facing up. After about a minute, remove the paper as it starts to peel away.
- Fry until golden brown on both sides.
- Remove and drain on paper towels.
- Drizzle with icing
