Spanish Nest Doughnuts

Ingredients

  • 1 cup (250ml) water
  • 1/4 cup (60g) butter
  • 3 eggs
  • a pinch of salt
  • 1 1/4 cups (150g) all-purpose flour
  • 1 liter of frying oil

Instructions

  1. In a saucepan, bring a cup of water with butter and a pinch of salt to a boil. Reduce the heat and add the sifted flour, stirring constantly.
  2. Beat the mixture until smooth and it begins to pull away from the sides of the saucepan. Let it cool down.
  3. Mix in the eggs until well combined.
  4. Transfer the dough to a piping bag.
  5. Cut squares of parchment paper about 4 inches (10cm) in size. Pipe a circle about 2.5 inches (7cm) in diameter onto each square.
  6. Heat the frying oil. Place the doughnuts into the hot oil with the parchment paper facing up. After about a minute, remove the paper as it starts to peel away.
  7. Fry until golden brown on both sides.
  8. Remove and drain on paper towels.
  9. Drizzle with icing
