Simple Lemon Cake


  • For the Cake:
  • 5 eggs {M}
  • 1 1/4 cups sugar
  • 1 packet vanilla sugar
  • 1 1/8 cups soft butter
  • 1 packet baking powder
  • 3 1/2 cups all-purpose flour
  • 2/3 cup milk
  • Zest and juice of one organic lemon
  • For the Glaze:
  • 1 1/4 cups powdered sugar
  • 3-4 tablespoons lemon juice
  • Additional:
  • Butter for greasing the pan


    Baking Time:
    Bake at 180°C (356°F) in a conventional oven for approximately 40-45 minutes.

    Prepare the Batter:

  1. In a mixing bowl, combine eggs, sugar, and vanilla sugar.
  2. Add soft butter, baking powder, all-purpose flour, milk, lemon zest, and lemon juice. Mix until you have a smooth batter.
  3. Bake:
  4. Grease the baking pan with butter.
  5. Pour the batter into the prepared pan.
  6. Bake in a preheated oven at 180°C (356°F) for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
  7. Glaze it:
  8. Mix powdered sugar with lemon juice to create a glaze.
  9. Drizzle the glaze over the cooled cake.
