No Bake Key Lime Cheesecake

This recipe is a favorite of mine, boasting a refreshing lime flavor that's perfect for spring or summer. Plus, it's so easy to make!

Ingredients

  • Crust:
  • 1 box (11 oz.) Nilla Vanilla wafers, crushed
  • 6 tbsp unsalted butter, melted
  • Cheesecake:
  • 3 packages (8 oz. each) cream cheese, softened
  • 1 1/4 cups powdered sugar
  • 14 oz. sweetened condensed milk
  • Zest of 2 limes
  • 1/4 cup key lime juice or regular lime juice
  • 1 tsp vanilla extract
  • 1 pint heavy whipping cream
  • Topping:
  • Whipped cream
  • Optional: 1/2 cup toasted almond crunch or toasted coconut

Instructions

  1. In a medium bowl, mix together the crushed wafers and melted butter.
  2. Press the crust mixture into a greased 9-inch springform pan lined with parchment paper. You can bake the crust for 10 minutes at 350°F or chill it in the fridge while preparing the cheesecake filling.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and beat until well combined. Gradually add the sweetened condensed milk, lime zest, lime juice, and vanilla extract, beating until smooth.
  4. In a separate bowl, beat the heavy whipping cream until stiff peaks form. Gently fold it into the cheesecake mixture.
  5. Pour the filling over the crust in the springform pan, spreading it evenly with a spatula. Chill in the fridge for at least 6 hours or overnight to set.
  6. Before serving, add your choice of toasted almond crunch or toasted coconut on top, pipe whipped cream, and enjoy the refreshing taste of this no bake key lime cheesecake!
