Banana Bread Cinnamon Rolls
Perfect for breakfast or dessert, these mouthwatering treats combine the comforting flavors of banana bread with the sweetness of cinnamon rolls.
Ingredients
- For the Dough:
- 1 cup warm milk (110°F)
- 2 1/2 tsp active dry yeast (1 package)
- 2 large eggs, room temperature
- 6 tbsp unsalted butter, melted
- 1/2 cup granulated sugar
- 1/3 cup mashed bananas (1 small banana)
- 4-4 1/4 cups all-purpose flour
- 1/2 tsp salt
- For the Filling:
- 5 tbsp unsalted butter, melted
- 1 cup light brown sugar
- 2 tbsp cinnamon
- 2 small bananas, sliced
- For the Glaze & Topping:
- 1 cup powdered sugar
- 2 tbsp maple syrup
- 2 tbsp milk
- 1/4 cup pecans, chopped
- 1 tbsp unsalted butter, melted
- 1 tbsp light brown sugar
Instructions
- In a small bowl, microwave the milk until it reaches 110°F, about 60 seconds.
- Place the warm milk and yeast into the bowl of a stand mixer fitted with a paddle attachment and let it sit for 10 minutes.
- Add the eggs, melted butter, granulated sugar, and mashed banana to the mixture and beat until just combined. Slowly add the flour and salt mixture, 1 cup at a time, until fully incorporated. Let it sit for 5 minutes, then switch to a dough hook and beat for 8 minutes.
- Transfer the dough to a greased bowl, cover it with a towel, and let it rise for 90-120 minutes in a warm place.
- While the dough is rising, prepare the filling by combining the melted butter, brown sugar, and cinnamon. Slice the two small bananas.
- Punch down the risen dough and roll it out into a rectangular shape. Spread the filling evenly over the dough and arrange the sliced bananas on top.
- Roll the dough into a log shape and slice it into large rolls. You should get about 8 large rolls. Place them in a 9” skillet or a 9x9 baking dish and pour the heavy cream over them.
- Preheat the oven to 375°F and bake the rolls for 25-30 minutes, or until golden brown.
- While the rolls are baking, prepare the glaze by combining the powdered sugar, maple syrup, and milk. In a separate bowl, mix together the chopped pecans, melted butter, and light brown sugar.
- Once the rolls are baked, drizzle the glaze over the top and sprinkle with the candied pecans.
