Cheesecake Brownies
Ingredients
- Brownie Layer:
- 1 cup (225g) melted butter
- 3/4 cup (75g) cocoa powder
- 1 cup (200g) granulated sugar
- 1 cup (200g) packed brown sugar
- 3 large eggs
- 1/2 cup (120g) strong coffee (2 teaspoons instant coffee dissolved in 1/2 cup water)
- 1 tablespoon (15g) vanilla extract
- 1 cup (135g) all-purpose flour
- Cheesecake Layer:
- 1/2 block (112g) cream cheese
- 1 large egg
- 1/4 cup (60g) sugar
- 1 teaspoon (5g) vanilla extract
Instructions
- Making the Brownie Layer:
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
- In a large mixing bowl, combine the melted butter, cocoa powder, granulated sugar, and brown sugar until well mixed.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the strong coffee and vanilla extract until smooth.
- Gradually add the flour and mix until just combined. Be careful not to overmix.
- Spread the brownie batter evenly into the prepared baking pan.
- Preparing the Cheesecake Layer:
- In another mixing bowl, beat together the cream cheese, egg, sugar, and vanilla extract until smooth and creamy.
- Layering:
- Pour the cheesecake mixture over the brownie batter in the pan.
- Use a knife or spatula to gently swirl the cheesecake mixture into the brownie batter to create a marbled effect.
- Baking:
- Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly firm.
- Remove from the oven and let cool completely before slicing into squares.
