Cheesecake Brownies

Ingredients

  • Brownie Layer:
  • 1 cup (225g) melted butter
  • 3/4 cup (75g) cocoa powder
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) packed brown sugar
  • 3 large eggs
  • 1/2 cup (120g) strong coffee (2 teaspoons instant coffee dissolved in 1/2 cup water)
  • 1 tablespoon (15g) vanilla extract
  • 1 cup (135g) all-purpose flour
  • Cheesecake Layer:
  • 1/2 block (112g) cream cheese
  • 1 large egg
  • 1/4 cup (60g) sugar
  • 1 teaspoon (5g) vanilla extract

Instructions

  1. Making the Brownie Layer:
  2. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  3. In a large mixing bowl, combine the melted butter, cocoa powder, granulated sugar, and brown sugar until well mixed.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the strong coffee and vanilla extract until smooth.
  6. Gradually add the flour and mix until just combined. Be careful not to overmix.
  7. Spread the brownie batter evenly into the prepared baking pan.
  8. Preparing the Cheesecake Layer:
  9. In another mixing bowl, beat together the cream cheese, egg, sugar, and vanilla extract until smooth and creamy.
  10. Layering:
  11. Pour the cheesecake mixture over the brownie batter in the pan.
  12. Use a knife or spatula to gently swirl the cheesecake mixture into the brownie batter to create a marbled effect.
  13. Baking:
  14. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly firm.
  15. Remove from the oven and let cool completely before slicing into squares.
