Coconut Cream Cookies

These soft treats are packed with coconut flavor and topped with a decadent chocolate drizzle.

Ingredients

  • Coconut Cookie:
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 ounces cream cheese, softened
  • 12 tablespoons unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups sweetened coconut flakes
  • Chocolate Drizzle & Topping:
  • 1/2 cup chocolate chips
  • 1/3 cup coconut flakes

Instructions

  1. Preheat your oven to 350°F and line two large baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt, then set it aside.
  3. In a mixing bowl, beat together the softened cream cheese and butter until smooth.
  4. Add in the brown sugar, granulated sugar, vanilla extract, and almond extract, and beat until well combined and creamy.
  5. Gradually add the flour mixture to the wet ingredients, mixing until fully combined.
  6. Fold in the sweetened coconut flakes until evenly distributed throughout the dough.
  7. Using a medium cookie scoop, portion out the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake the cookies in the preheated oven for 12 minutes, or until the edges are lightly golden.
  9. Once baked, remove the cookies from the oven and let them cool slightly on the baking sheets.
  10. In the meantime, melt the chocolate chips in the microwave in 30-second intervals, stirring until smooth. Transfer the melted chocolate to a piping bag.
  11. Drizzle the melted chocolate over the cooled cookies and sprinkle with additional coconut flakes.
  12. Allow the chocolate to set before serving, then enjoy these delightful Coconut Cream Cookies with a cup of milk or your favorite hot beverage
