These treats are sure to bring you some extra luck and happiness. They're easy to whip up and incredibly moist, plus they only take 20 minutes to bake.

Ingredients

  • Cupcakes:
  • 2 cups granulated sugar
  • 1 and 2/3 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1 and 1/2 teaspoons baking soda
  • 1 and 1/2 teaspoons baking powder
  • 2 large eggs
  • 1/2 cup Irish cream liqueur
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 and 1/2 teaspoons vanilla extract
  • 1 cup boiling water
  • Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 and 1/2 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 3-4 drops green food coloring
  • Ganache:
  • 2 (4-ounce) semi-sweet chocolate bars, chopped
  • 1/2 cup heavy cream
  • Toppings:
  • Rainbow Candy Belts
  • Mini Marshmallows
  • Gold Sprinkle Pearls
  • Rolo Candies
  • White Decorating Frosting
  • Chocolate Gold Coins

Instructions

  1. Preheat your oven to 350°F (180°C) and line two 12-cup muffin pans with cupcake liners.
  2. In a medium bowl, whisk together the sugar, flour, cocoa powder, baking soda, and baking powder until well combined.
  3. Add the eggs, Irish cream liqueur, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat with a hand mixer for about 2 minutes until smooth.
  4. Carefully pour in the boiling water and mix for an additional minute until the batter is well combined.
  5. Fill each cupcake liner about 3/4 full with batter. Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cupcakes to cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
  7. While the cupcakes are cooling, prepare the frosting by beating the softened butter in a stand mixer fitted with the paddle attachment for about 2 minutes. Add the powdered sugar, heavy cream, vanilla extract, and green food coloring, then beat for an additional 3-5 minutes until fluffy. Transfer the frosting to a piping bag fitted with your desired tip.
  8. To make the ganache, place the chopped chocolate in a medium bowl. Heat the heavy cream in the microwave for 2 minutes, then pour it over the chocolate. Stir until the mixture thickens, then transfer it to a piping bag and snip the tip.
  9. Once the cupcakes are completely cooled, use a spoon to carve a small cavity in the center of each cupcake. Fill the cavities with ganache and pipe the frosting on top.
  10. Decorate your cupcakes with rainbow candy belts, mini marshmallows, gold sprinkle pearls, Rolo candies, white decorating frosting, and chocolate gold coins. Let your creativity shine!
