Mini Apple Pie
Ingredients
- For the crust:
- 3 cups (420g) all-purpose flour
- 1/4 cup (60g) sugar (you can add more if you prefer sweeter crust, but remember, more sugar can make the crust more fragile)
- 1/2 teaspoon salt
- 1 3/4 sticks (200g) frozen butter (grated or cubed)
- 2 large eggs
- 1 tablespoon (14g) cold milk
- Filling:
- 2 Granny Smith apples
- 1/2 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the flour, sugar, and salt for the crust.
- Add the grated or cubed frozen butter to the dry ingredients and mix until it resembles coarse crumbs.
- In a small bowl, beat the eggs and then add them to the flour mixture.
- Add the cold milk to the mixture and knead until it forms a dough. If it's too dry, you can add a little more milk.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- While the dough chills, prepare the filling. Peel, core, and chop the apples into small pieces.
- In a saucepan, combine the chopped apples, sugar, cinnamon, cloves, nutmeg, and cornstarch. Cook over medium heat until the apples are tender and the mixture is thickened, stirring occasionally.
- Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness.
- Cut the dough into circles large enough to fit into the cups of a mini muffin tin.
- Press each circle into the greased mini muffin cups, forming small crusts.
- Fill each crust with the prepared apple filling.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
- Allow the mini apple pies to cool slightly before serving. Enjoy these delightful bite-sized treats!
