Mini Apple Pie

Ingredients

  • For the crust:
  • 3 cups (420g) all-purpose flour
  • 1/4 cup (60g) sugar (you can add more if you prefer sweeter crust, but remember, more sugar can make the crust more fragile)
  • 1/2 teaspoon salt
  • 1 3/4 sticks (200g) frozen butter (grated or cubed)
  • 2 large eggs
  • 1 tablespoon (14g) cold milk
  • Filling:
  • 2 Granny Smith apples
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the flour, sugar, and salt for the crust.
  3. Add the grated or cubed frozen butter to the dry ingredients and mix until it resembles coarse crumbs.
  4. In a small bowl, beat the eggs and then add them to the flour mixture.
  5. Add the cold milk to the mixture and knead until it forms a dough. If it's too dry, you can add a little more milk.
  6. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  7. While the dough chills, prepare the filling. Peel, core, and chop the apples into small pieces.
  8. In a saucepan, combine the chopped apples, sugar, cinnamon, cloves, nutmeg, and cornstarch. Cook over medium heat until the apples are tender and the mixture is thickened, stirring occasionally.
  9. Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness.
  10. Cut the dough into circles large enough to fit into the cups of a mini muffin tin.
  11. Press each circle into the greased mini muffin cups, forming small crusts.
  12. Fill each crust with the prepared apple filling.
  13. Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown.
  14. Allow the mini apple pies to cool slightly before serving. Enjoy these delightful bite-sized treats!
