Cinnamon Rolls

Ingredients

  • For the Dough:
  • 500g all-purpose flour
  • 50g sugar
  • 15g powdered milk
  • 300ml water
  • 10g dry yeast
  • 10g salt
  • 60g unsalted butter
  • For the Filling:
  • 60g softened butter
  • 100g brown sugar
  • 1 tbsp ground cinnamon
  • For the Frosting:
  • 55g butter
  • 120g powdered sugar
  • 4 tbsp cream cheese
  • 1 tbsp vanilla essence or seeds

Instructions

  1. In the mixer bowl, combine flour, sugar, powdered milk, and fresh yeast.
  2. Add water and mix on low speed to combine. Add salt and mix a bit more.
  3. Add butter and let it incorporate into the dough.
  4. Increase the mixer speed and let it beat until it reaches the "windowpane stage" (when gluten has developed).
  5. Remove the dough from the bowl, form a ball, cover, and let it rest.
  6. While it's resting, make the filling. Process butter, sugar, and cinnamon in a food processor until it turns into a paste. Set aside.
  7. After the first rise, roll out the dough, spread the filling paste, roll it up, and cut into equal pieces. Allow it to rise for another hour.
  8. Beat the frosting ingredients in the mixer and set aside.
  9. Bake for 25 minutes at 200 degrees Celsius or until golden brown.
  10. Spread the frosting, and voilà – enjoy your scrumptious Cinnamon Rolls!
