Mojito Cupcakes

Ingredients

  • For the batter:
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • 1 teaspoon (5g) salt
  • 3/4 cup (180g) sugar
  • 2 large eggs
  • 1/2 cup (117g) coconut oil
  • 2 teaspoons (10g) vanilla extract
  • 1/4 cup (71g) plain yogurt
  • 1/3 cup (80g) light rum
  • 2 teaspoons lime zest
  • 2 tablespoons (30g) lime juice
  • For the frosting:
  • 3/4 cup (165g) softened butter
  • 2 1/2 cups powdered sugar
  • 2 tablespoons finely chopped mint leaves
  • 2 tablespoons light rum
  • Lemon slices and mint leaves for decoration

Instructions

  1. Preheat the oven to 325°F (160°C) and line a cupcake pan with cupcake liners.
  2. In a bowl, combine the flour, baking powder, and salt.
  3. In another bowl, beat together the sugar, eggs, coconut oil, and vanilla extract. Then, add the yogurt, rum, lime zest, and lime juice.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Fill the cupcake liners about 3/4 full with the batter. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow them to cool completely.
  6. For the frosting, combine all the frosting ingredients in a bowl and beat for 2 minutes until smooth and creamy. Frost the cupcakes and decorate as desired with lemon slices and mint leaves.
