- 6 eggs
- 160g sugar
- A pinch of salt
- 120g flour
- 50g cornstarch
- 2g baking powder
Preparation:
- Beat eggs, sugar, and a pinch of salt until fluffy. Sift in dry ingredients and gently fold.
- Spread the batter on a baking sheet lined with parchment paper. Bake in a preheated oven at 170°C (338°F) for about 8-10 minutes.
- Take it out of the oven and place it directly on a clean cloth, slowly removing the parchment paper.
For the Cream:
- 400ml cream
- 300g mascarpone
- 80g powdered sugar
- 2 generous tbsp Lotus Biscoff spread
- 2 packets whipping cream stabilizer
- Place all ingredients except Lotus Biscoff spread in a bowl and whip. Add Lotus Biscoff spread and mix briefly.
- Spread the cream as shown, sprinkle Lotus Biscoff on top. You can also drizzle melted Lotus Biscoff spread over it (I didn’t have much). Roll it up and chill.
- Briefly warm Lotus Biscoff spread and spread it over the roll. Decorate as you like and savor the dreamy delight!
