Lemon Cheesecake Bars

Ingredients

  • For the crust:
  • 1 cup (100 g) of crushed Graham crackers
  • 4 tablespoons (50 g) of melted butter
  • For the cheesecake (all at room temperature):
  • 1 1/2 blocks (330 g) of cream cheese
  • 1/2 cup (150 g) of sweetened condensed milk
  • 1/4 cup (60 g) of Greek yogurt or plain yogurt
  • 1/4 cup (60 ml) of lemon juice (adjust to your taste preference for acidity)
  • 2 teaspoons (10 g) of vanilla extract
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a bowl, combine the crushed Graham crackers and melted butter until well mixed. Press this mixture evenly into the bottom of the prepared baking dish to form the crust.
  3. In a separate bowl, beat the cream cheese until smooth and creamy. Add in the sweetened condensed milk, Greek yogurt, lemon juice, and vanilla extract, and mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition, until the mixture is smooth and creamy.
  5. Pour the cheesecake batter over the prepared crust in the baking dish, spreading it out evenly.
  6. Bake in the preheated oven for about 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  7. Remove from the oven and let the cheesecake bars cool completely at room temperature.
  8. Once cooled, refrigerate the bars for at least 2 hours, or until fully chilled and set.
  9. When ready to serve, slice the chilled cheesecake into bars, and enjoy the refreshing flavor of lemon in every bite! 🍋
