Lemon Cheesecake Bars
Ingredients
- For the crust:
- 1 cup (100 g) of crushed Graham crackers
- 4 tablespoons (50 g) of melted butter
- For the cheesecake (all at room temperature):
- 1 1/2 blocks (330 g) of cream cheese
- 1/2 cup (150 g) of sweetened condensed milk
- 1/4 cup (60 g) of Greek yogurt or plain yogurt
- 1/4 cup (60 ml) of lemon juice (adjust to your taste preference for acidity)
- 2 teaspoons (10 g) of vanilla extract
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a bowl, combine the crushed Graham crackers and melted butter until well mixed. Press this mixture evenly into the bottom of the prepared baking dish to form the crust.
- In a separate bowl, beat the cream cheese until smooth and creamy. Add in the sweetened condensed milk, Greek yogurt, lemon juice, and vanilla extract, and mix until well combined.
- Add the eggs one at a time, mixing well after each addition, until the mixture is smooth and creamy.
- Pour the cheesecake batter over the prepared crust in the baking dish, spreading it out evenly.
- Bake in the preheated oven for about 25-30 minutes, or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let the cheesecake bars cool completely at room temperature.
- Once cooled, refrigerate the bars for at least 2 hours, or until fully chilled and set.
- When ready to serve, slice the chilled cheesecake into bars, and enjoy the refreshing flavor of lemon in every bite! 🍋
