Decadent Crepe Layer Surprise

Ingredients

  • 6 Eggs
  • 1 1/4 cups Oat or Buckwheat Flour
  • 1 cup plus 2 tablespoons Milk or plant-based milk
  • 3 tablespoons Cocoa Powder
  • A drizzle of Extra Virgin Olive Oil
  • 1 1/2 cups Heavy Cream (for white filling)
  • 1 cup Mascarpone or Cream Cheese (for white filling)
  • Optional: 2 tablespoons of your preferred sweetener (for white filling)
  • 1 1/2 cups Heavy Cream (for cocoa cream)
  • 1 cup Mascarpone or Cream Cheese (for cocoa cream)
  • 3 tablespoons Cocoa Powder (for cocoa cream)
  • Optional: 2 tablespoons of your preferred sweetener (for cocoa cream)

Instructions

  1. Mix and cook the crepes.
  2. Cut them into uniform shapes using a ring cutter (mine is 18cm) or by hand.
  3. Whisk the heavy cream, mascarpone or cream cheese, and optional sweetener for the white filling until it has the consistency shown in the video. Transfer to a piping bag.
  4. Whisk the heavy cream, mascarpone or cream cheese, cocoa powder, and optional sweetener for the cocoa cream until it has the consistency shown in the video. Transfer to a piping bag.
  5. Pipe lines of one cream onto a crepe, place another crepe on top, and mark the holes with a pen or by hand.
  6. Fill the holes with the other cream.
  7. Repeat until all creams are used, finish with a crepe, and adjust the sides.
  8. Refrigerate and decorate with cocoa before serving. Enjoy!
