Crème Brûlée Cupcakes

Ingredients

  • Cupcakes:
  • 1 1/2 cups all-purpose flour
  • 2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 8 tbsp unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • Cinnamon Frosting:
  • 16 tbsp unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tsp cinnamon
  • 3 tbsp milk
  • Filling:
  • Vanilla Pudding or Crème Brûlée Filling
  • Topping:
  • 1/2 cup sugar
  • Kitchen Torch

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a bowl, combine the flour, cinnamon, baking powder, and salt. Set aside.
  3. In a mixing bowl, beat together the butter, sugar, eggs, and vanilla extract until smooth. Gradually add the dry ingredients, alternating with the milk, until the batter is smooth.
  4. Use an ice cream scoop to fill cupcake liners 3/4 full. Bake for 15 minutes, then prepare the frosting.
  5. Make the frosting by beating together the butter, powdered sugar, cinnamon, and milk until smooth.
  6. Once the cupcakes are baked and cooled, create a cavity in each cupcake and pipe in the pudding or crème brûlée filling.
  7. Pipe the frosting onto each cupcake. Flip the cupcakes over into a bowl of sugar to coat the frosting.
  8. Use a kitchen torch to caramelize the sugar on top until it forms a golden crust. Finish with a dollop of frosting on top, and enjoy every scrumptious bite!
