Crème Brûlée Cupcakes
Ingredients
- Cupcakes:
- 1 1/2 cups all-purpose flour
- 2 tsp cinnamon
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 8 tbsp unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 3/4 cup milk
- Cinnamon Frosting:
- 16 tbsp unsalted butter, softened
- 4 cups powdered sugar
- 2 tsp cinnamon
- 3 tbsp milk
- Filling:
- Vanilla Pudding or Crème Brûlée Filling
- Topping:
- 1/2 cup sugar
- Kitchen Torch
Instructions
- Preheat your oven to 350 degrees F.
- In a bowl, combine the flour, cinnamon, baking powder, and salt. Set aside.
- In a mixing bowl, beat together the butter, sugar, eggs, and vanilla extract until smooth. Gradually add the dry ingredients, alternating with the milk, until the batter is smooth.
- Use an ice cream scoop to fill cupcake liners 3/4 full. Bake for 15 minutes, then prepare the frosting.
- Make the frosting by beating together the butter, powdered sugar, cinnamon, and milk until smooth.
- Once the cupcakes are baked and cooled, create a cavity in each cupcake and pipe in the pudding or crème brûlée filling.
- Pipe the frosting onto each cupcake. Flip the cupcakes over into a bowl of sugar to coat the frosting.
- Use a kitchen torch to caramelize the sugar on top until it forms a golden crust. Finish with a dollop of frosting on top, and enjoy every scrumptious bite!
