Ingredients

  • For the Cake:
  • 2 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 16 tablespoons unsalted butter, melted (2 sticks)
  • 1 ½ cups granulated sugar
  • 5 medium eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/4 cups buttermilk
  • For the Pudding:
  • 1 box instant pudding (vanilla, coconut, or chocolate)
  • For the Whipped Cream & Toppings:
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 bananas, sliced
  • 1 cup vanilla wafers

Instructions

  1. Preheat your oven to 350°F. Grease a 9x13 baking dish or an 11x11 square springform pan. I love using the springform pan for easy baking!
  2. In a bowl, combine the flour, baking powder, and salt. Set aside.
  3. Using a hand or stand mixer, beat together the granulated sugar and melted butter for about 3-5 minutes on medium speed until creamy.
  4. Add in the eggs and vanilla extract, and beat until well combined.
  5. Gradually add the flour mixture and buttermilk, alternating between the two, and mix until fully combined.
  6. Pour the batter into the prepared baking dish or pan and bake for about 30 minutes. Check for doneness around 25 minutes; if using a 9x13 pan, it may take up to 35 minutes.
  7. While the cake is baking, prepare the instant pudding according to the box instructions.
  8. In a separate bowl, whip the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Refrigerate both the pudding and whipped cream until needed.
  9. Slice the bananas.
  10. Once the cake is done baking, let it cool for 5 minutes. Then, poke holes in the top of the cake and let it sit for another 5 minutes.
  11. Spread the prepared instant pudding over the cake and smooth it out.
  12. Layer the sliced bananas on top and add a handful of whole vanilla wafers. Sprinkle crushed wafers over the pudding.
  13. Spread a layer of whipped cream over the cake, then pipe the remaining whipped cream on top for a decorative touch. Garnish with crushed wafers and enjoy this delicious treat!
