Creamy Lotus Biscoff Cake

Ingredients

  • For the Cake:
  • 2 eggs
  • 160g sugar
  • 200ml heavy cream
  • 1 pack baking powder
  • 150g flour
  • 50g crushed Lotus Biscoff cookies
  • For the Filling:
  • 400ml heavy cream
  • 150g Philadelphia cream cheese
  • 100g mascarpone cheese
  • 100g powdered sugar
  • 100g finely crushed Lotus Biscoff cookies with filling
  • 50g Lotus Biscoff spread
  • 1 pack whipped cream stabilizer (Sahnesteif)
  • Additional:
  • Lotus Biscoff cookies for decoration
  • Strawberries

Instructions

  1. In a bowl, whisk eggs and sugar until creamy. Add the remaining cake ingredients and mix briefly.
  2. Pour the batter into a 28cm springform pan and bake in a preheated oven at 170°C (340°F) for approximately 30 minutes. Allow it to cool completely.
  3. For the filling, combine all ingredients except Lotus Biscoff cookies and spread in a bowl. Mix until creamy. Add finely crushed Lotus Biscoff cookies and Lotus Biscoff spread, then mix briefly.
  4. Spread the filling over the cake and smooth the surface. Decorate as you like and refrigerate for at least 4 hours.
