Chocolate Chip Alfajores
Ingredients
- (1 stick) 1/2 cup of melted butter
- (1/2 cup) 1/2 cup of powdered sugar
- (1 large) 1 large egg
- (1 tsp) 1 teaspoon of vanilla extract
- (1 cup) 1 cup of cornstarch (cornflour)
- (1/2 cup) 1/2 cup of all-purpose flour
- (1 tsp) 1 teaspoon of baking powder
- (1/4 cup) 1/4 cup of mini chocolate chips
- 1 can of La Lechera Dulce de Leche
Instructions
- Preparation:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Mixing the Dough:
- In a mixing bowl, combine the melted butter and powdered sugar until well mixed.
- Add the egg and vanilla extract, and mix until smooth.
- Gradually add the cornstarch, all-purpose flour, and baking powder, mixing until a dough forms.
- Fold in the mini chocolate chips until evenly distributed throughout the dough.
- Shaping the Cookies:
- Divide the dough into equal portions and roll each portion into a ball.
- Place the dough balls on the prepared baking sheet, spacing them evenly apart.
- Use the bottom of a glass to gently flatten each dough ball into a disc shape.
- Baking:
- Bake the cookies in the preheated oven for about 10-12 minutes, or until they are set and the edges are just beginning to turn golden brown.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Assembling the Alfajores:
- Once the cookies are completely cooled, spread a generous layer of La Lechera Dulce de Leche on the flat side of one cookie.
- Sandwich another cookie on top to create a filled alfajor.
- Repeat with the remaining cookies and Dulce de Leche filling.
