Triple Chocolate Muffins

Ingredients

  • 2 cups (280g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon baking soda
  • 3/4 cup (75g) cocoa powder
  • 1 cup (240g) sugar
  • 1/2 teaspoon salt
  • 1 cup (250g) yogurt
  • 1/4 cup (55g) melted butter
  • 1/4 cup (60g) canola or sunflower oil
  • 1 teaspoon vanilla extract
  • 2 large eggs (about 112g)
  • 1 cup (170g) chocolate chips and chunks

Instructions

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners or lightly grease the cups.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, cocoa powder, sugar, and salt. Mix well.
  3. In another bowl, whisk together the yogurt, melted butter, canola or sunflower oil, vanilla extract, and eggs until well combined.
  4. Pour the wet ingredients into the bowl of dry ingredients and gently fold together until just combined. Avoid overmixing.
  5. Fold in the chocolate chips and chocolate chunks until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  7. Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
