Triple Chocolate Muffins
Ingredients
- 2 cups (280g) all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon baking soda
- 3/4 cup (75g) cocoa powder
- 1 cup (240g) sugar
- 1/2 teaspoon salt
- 1 cup (250g) yogurt
- 1/4 cup (55g) melted butter
- 1/4 cup (60g) canola or sunflower oil
- 1 teaspoon vanilla extract
- 2 large eggs (about 112g)
- 1 cup (170g) chocolate chips and chunks
Instructions
- Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners or lightly grease the cups.
- In a mixing bowl, combine the flour, baking powder, baking soda, cocoa powder, sugar, and salt. Mix well.
- In another bowl, whisk together the yogurt, melted butter, canola or sunflower oil, vanilla extract, and eggs until well combined.
- Pour the wet ingredients into the bowl of dry ingredients and gently fold together until just combined. Avoid overmixing.
- Fold in the chocolate chips and chocolate chunks until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
