Ingredients

  • 1/2 cup (100g) cream cheese
  • 2 cups (450g) plain yogurt
  • 1/3 cup (70g) lemon juice (adjust according to your preference for acidity)
  • 1/2 cup (150g) sweetened condensed milk
  • 20 crushed Maria cookies (about 100g)
  • 4 tablespoons (50g) melted butter

Instructions

  1. Prepare the Crust:
  2. In a bowl, combine the crushed Maria cookies with the melted butter until well mixed.
  3. Divide the mixture evenly among your serving glasses or cups, pressing it down firmly to form the crust at the bottom.
  4. Place the glasses in the refrigerator to chill while you prepare the filling.
  5. Make the Filling:
  6. In another bowl, beat the cream cheese until smooth and creamy.
  7. Add the plain yogurt, lemon juice, and sweetened condensed milk to the cream cheese, and mix until everything is well combined and smooth.
  8. Taste the mixture and adjust the amount of lemon juice according to your preference for acidity.
  9. Assemble the Cups:
  10. Once the crust has chilled for about an hour, remove the glasses from the refrigerator.
  11. Pour the lemon filling mixture evenly into each glass, on top of the prepared crusts.
  12. Chill and Serve:
  13. Return the glasses to the refrigerator and let them chill for at least another hour before serving.
  14. When ready to serve, you can garnish the tops with additional lemon zest or a slice of lemon, if desired.
  15. Enjoy your refreshing Lemon Pie Cups straight from the fridge!
