Lemon Pie Cups
Ingredients
- 1/2 cup (100g) cream cheese
- 2 cups (450g) plain yogurt
- 1/3 cup (70g) lemon juice (adjust according to your preference for acidity)
- 1/2 cup (150g) sweetened condensed milk
- 20 crushed Maria cookies (about 100g)
- 4 tablespoons (50g) melted butter
Instructions
- Prepare the Crust:
- In a bowl, combine the crushed Maria cookies with the melted butter until well mixed.
- Divide the mixture evenly among your serving glasses or cups, pressing it down firmly to form the crust at the bottom.
- Place the glasses in the refrigerator to chill while you prepare the filling.
- Make the Filling:
- In another bowl, beat the cream cheese until smooth and creamy.
- Add the plain yogurt, lemon juice, and sweetened condensed milk to the cream cheese, and mix until everything is well combined and smooth.
- Taste the mixture and adjust the amount of lemon juice according to your preference for acidity.
- Assemble the Cups:
- Once the crust has chilled for about an hour, remove the glasses from the refrigerator.
- Pour the lemon filling mixture evenly into each glass, on top of the prepared crusts.
- Chill and Serve:
- Return the glasses to the refrigerator and let them chill for at least another hour before serving.
- When ready to serve, you can garnish the tops with additional lemon zest or a slice of lemon, if desired.
