Chocolate Banana Crepe Rolls

Chocolate Banana Crepe Rolls

Ingredients

  • 4 eggs
  • 100g oat flour or buckwheat flour
  • 200ml milk or plant-based milk
  • 130g hot coconut milk (or cream)
  • 100g dark chocolate
  • 1 banana per crepe
  • 200g melted chocolate
  • 60g chopped almonds
  • Optional: a splash of coconut oil or another oil for smoother chocolate

Instructions

  1. In a bowl, mix the eggs, flour, and milk until smooth to make the crepe batter.
  2. Heat a non-stick pan over medium heat and pour a ladleful of batter into the pan. Swirl the batter around to coat the bottom evenly. Cook until golden brown on both sides, then repeat with the remaining batter to make all the crepes.
  3. In a saucepan, combine the hot coconut milk (or cream) with the dark chocolate. Stir until the chocolate is melted and the mixture is smooth to make the filling.
  4. Spread the chocolate mixture evenly onto each crepe. Place a banana half on top of each and roll up the crepes.
  5. Melt the chocolate for the topping and spread it over the rolled crepes. Sprinkle chopped almonds on top.
  6. Refrigerate the crepes until the chocolate is set. Optional: add a splash of coconut oil or another oil to the melted chocolate for a smoother consistency.
  7. Once set, serve and enjoy!
