Chilled Pistachio Mousse Cake

Ingredients

  • 4 eggs
  • 120 ml of oil
  • 1 tbsp vanilla essence
  • 1 1/2 cups refined sugar
  • 120 ml warm milk
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tbsp pistachio cream or paste
  • For the Mousse:
  • 200g white chocolate
  • 100ml heavy cream
  • 2 tbsp pistachio cream
  • 300g whipped cream

Instructions

  1. Blend the cake batter in a blender until smooth. Pour into a baking dish (mine is 30x30) and bake at 180 degrees Celsius for approximately 30 minutes.
  2. While it bakes, melt the chocolate and heavy cream in a bowl in the microwave in 30-second intervals. Stir until smooth. Add the pistachio cream and mix well. Let it cool completely and fold in the whipped cream. Set aside.
  3. Cut the cake, moisten with milk, add the pistachio mousse, sandwich with more cake, moisten again, and add more mousse. Decorate as you like!
