Passion Fruit Mousse Pave

Ingredients

  • Ingredients for the Mousse:
  • 2 cans of sweetened condensed milk
  • 2 cans of heavy cream
  • 300ml concentrated passion fruit juice
  • For the Italian Meringue:
  • 2 egg whites
  • 8 tbsp sugar
  • For the Passion Fruit Jelly:
  • 3 passion fruits
  • 1 cup sugar
  • Ladyfinger cookies soaked in milk

Instructions

  1. Blend the mousse ingredients in a blender and layer them in any dish you like, alternating with the ladyfinger cookies. Chill in the fridge for 4 hours, covered with plastic wrap.
  2. Before serving, cook the egg whites and sugar in a saucepan over low heat, stirring until you no longer feel sugar grains (about 2 minutes). Transfer to a mixer and beat for 7 minutes.
  3. For the jelly: combine everything in a saucepan and simmer until it thickens. Serve with the marshmallow and jelly on top. Enjoy!!
