Chilled Pistachio Cake
Ingredients
- 2 eggs
- 180g all-purpose flour
- 120ml milk
- 180g sugar
- 60ml vegetable oil
- 1 teaspoon baking powder
- 30g crushed pistachios
- For the Filling:
- 2 cans of sweetened condensed milk
- 1 can of heavy cream
- 120g milk chocolate
- 3 tablespoons pistachio paste
- 1 tablespoon butter
Instructions
- In a blender, mix the liquids with sugar and crushed pistachios. Blend for 5 minutes.
- Combine the mixture with the flour in a bowl and finish by adding the baking powder.
- Transfer the batter to a greased bundt cake pan and bake in a preheated oven for about 35 minutes or until done.
- For the brigadeiro (chocolate fudge): Mix all ingredients in a pan over low heat. Stir constantly until it comes off the bottom and changes texture. Set aside.
- Assemble the cake when everything is cool! Finish with pistachios on top, and voilà - enjoy your delightful pistachio treat!
