Chilled Pistachio Cake

Ingredients

  • 2 eggs
  • 180g all-purpose flour
  • 120ml milk
  • 180g sugar
  • 60ml vegetable oil
  • 1 teaspoon baking powder
  • 30g crushed pistachios
  • For the Filling:
  • 2 cans of sweetened condensed milk
  • 1 can of heavy cream
  • 120g milk chocolate
  • 3 tablespoons pistachio paste
  • 1 tablespoon butter

Instructions

  1. In a blender, mix the liquids with sugar and crushed pistachios. Blend for 5 minutes.
  2. Combine the mixture with the flour in a bowl and finish by adding the baking powder.
  3. Transfer the batter to a greased bundt cake pan and bake in a preheated oven for about 35 minutes or until done.
  4. For the brigadeiro (chocolate fudge): Mix all ingredients in a pan over low heat. Stir constantly until it comes off the bottom and changes texture. Set aside.
  5. Assemble the cake when everything is cool! Finish with pistachios on top, and voilà - enjoy your delightful pistachio treat!
