Creamy Banana Delight

This delightful combination of banana, lemon, cottage cheese, and chocolate strikes a perfect balance between creaminess, sweetness, tanginess, and rich cocoa.


  • Caramelized Bananas:
  • 1.7 ounces (50 grams) of water
  • 1.7 ounces (50 grams) of sugar
  • 3 bananas (10.5 ounces or 300 grams)
  • 0.5 ounces (15 grams) of lemon juice
  • 1 ounce (30 grams) of 82.5% butter
  • Zest of 1/2 lemon
  • 14.1 ounces (400 grams) of 9% cottage cheese
  • 0.6 ounces (18 grams) of gelatin
  • 3.2 ounces (90 grams) of water
  • Chocolate Layer:
  • 3.2 ounces (90 grams) of milk chocolate
  • 2.5 ounces (70 grams) of 20% cream
  • 0.14 ounces (4 grams) of gelatin
  • 0.7 ounces (20 grams) of water


Line the bottom of the pan with plastic wrap and line the sides with acetate sheets.

Soak the gelatin in cold boiled water and let it swell for 20 minutes or follow the package instructions.

Caramelized Bananas:
In a skillet, combine sugar and water, bring to a boil for 3 minutes. Add sliced bananas and lemon juice. Simmer until bananas soften. Add lemon zest and butter. Once the mixture thickens, remove from heat. You'll have about 12.3 ounces (350 grams) of banana mass.

Add the banana puree to the cottage cheese and blend until smooth.

Heat the gelatin until dissolved but not boiling.

Mix the dissolved gelatin into the banana-cottage cheese mixture. Pour into the prepared pan and refrigerate for 30 minutes.

Chocolate Layer:
Melt the chocolate with cream over a double boiler until smooth. Add the dissolved gelatin, mix well, and pour over the set banana-cottage cheese layer. Cover with plastic wrap and refrigerate overnight.

The next day, decorate with chocolate curls, slice into portions, and enjoy!
