Chilled Carrot Cake with Brigadeiro
Ingredients
- Ingredients (I'm using cups here because this is my grandma's recipe. My cup is 240ml):
- 3 medium carrots, peeled and chopped
- ½ cup vegetable oil
- 4 eggs
- 2 cups sugar
- 2 ½ cups all-purpose flour
- 1 tbsp baking powder
- For the Brigadeiro:
- 2 cans sweetened condensed milk
- 200g milk chocolate
- 1 can heavy cream
- 1 tbsp unsalted butter
Instructions
- Start by blending the eggs with carrots, oil, and sugar in a blender. Blend for 5 minutes.
- Next, pour this mixture into a bowl with flour. Gently fold it in. Add the baking powder and bake.
- While it's baking, make the brigadeiro: throw everything into a pan and stir until it comes off the sides.
- Assemble the cake: cut it in half and place it back in the same pan. Soak it with milk and add half of the brigadeiro. Seal it with the other cake layer.
- Poke it with a fork, add more milk to moisten, and more brigadeiro. Top it off with shavings of milk chocolate.
- Chill it in the refrigerator. Come back and indulge! Enjoy every bite
