Chilled Carrot Cake with Brigadeiro


  • Ingredients (I'm using cups here because this is my grandma's recipe. My cup is 240ml):
  • 3 medium carrots, peeled and chopped
  • ½ cup vegetable oil
  • 4 eggs
  • 2 cups sugar
  • 2 ½ cups all-purpose flour
  • 1 tbsp baking powder
  • For the Brigadeiro:
  • 2 cans sweetened condensed milk
  • 200g milk chocolate
  • 1 can heavy cream
  • 1 tbsp unsalted butter


  1. Start by blending the eggs with carrots, oil, and sugar in a blender. Blend for 5 minutes.
  2. Next, pour this mixture into a bowl with flour. Gently fold it in. Add the baking powder and bake.
  3. While it's baking, make the brigadeiro: throw everything into a pan and stir until it comes off the sides.
  4. Assemble the cake: cut it in half and place it back in the same pan. Soak it with milk and add half of the brigadeiro. Seal it with the other cake layer.
  5. Poke it with a fork, add more milk to moisten, and more brigadeiro. Top it off with shavings of milk chocolate.
  6. Chill it in the refrigerator. Come back and indulge! Enjoy every bite
