Almond Spritz Cookies

Ingredients

  • 1/4 cup (60ml) oil
  • 1 cup (120g) powdered sugar
  • 1 packet vanilla sugar
  • 1 cup (100g) ground almonds
  • 1/2 cup (60g) shredded coconut
  • 2 3/4 cups (350g) all-purpose flour
  • 1 packet baking powder
  • 2 eggs
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 180°C (356°F) with both upper and lower heat.
  2. In a large bowl, cream together the softened butter, oil, powdered sugar, and vanilla sugar.
  3. Add the ground almonds and shredded coconut to the mixture, and blend well.
  4. Sift in the flour and baking powder, mixing until the dough comes together.
  5. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  6. Add the cinnamon, and mix until the spices are evenly distributed throughout the dough.
  7. Use a cookie press or shape the dough into small balls and press with a fork to create a pattern.
  8. Place the cookies on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for approximately 20 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on a wire rack before serving.
