Almond Spritz Cookies
Ingredients
- 1/4 cup (60ml) oil
- 1 cup (120g) powdered sugar
- 1 packet vanilla sugar
- 1 cup (100g) ground almonds
- 1/2 cup (60g) shredded coconut
- 2 3/4 cups (350g) all-purpose flour
- 1 packet baking powder
- 2 eggs
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 180°C (356°F) with both upper and lower heat.
- In a large bowl, cream together the softened butter, oil, powdered sugar, and vanilla sugar.
- Add the ground almonds and shredded coconut to the mixture, and blend well.
- Sift in the flour and baking powder, mixing until the dough comes together.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Add the cinnamon, and mix until the spices are evenly distributed throughout the dough.
- Use a cookie press or shape the dough into small balls and press with a fork to create a pattern.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake in the preheated oven for approximately 20 minutes or until the edges are lightly golden.
- Allow the cookies to cool on a wire rack before serving.
