WIX Cookies
Ingredients
- For the cookies:
- 300g all-purpose flour
- 200g softened butter
- 70g sugar
- 1 packet vanilla sugar
- 1 egg
- For the caramel filling:
- 200g caramel candies
- 30ml 30% cream
- 40g butter
- For the chocolate drizzle:
- 80g milk chocolate
- 15ml 30% cream
Instructions
- Cream together the softened butter, sugar, and vanilla sugar.
- Beat in the egg until well combined.
- Sift in the flour and mix until a dough forms, then knead the dough by hand.
- Chill the dough in the fridge for 5 minutes.
- Roll out the dough on a floured surface and cut out circles using a glass with a diameter of about 7cm.
- Cut smaller holes in the center of half of the circles to create rings.
- Place the rings on top of the whole circles and bake at 170°C for 15-20 minutes.
- While the cookies are baking, melt together the caramel candies, cream, and butter in a saucepan over low heat until smooth.
- Be careful not to let it burn. Once melted, fill the holes in the cookies with the caramel mixture and chill in the fridge for about an hour.
- After chilling, drizzle melted chocolate mixed with cream over the cookies and chill again until the chocolate sets.
